Biryani (India)
A fragrant Indian rice dish layered with spices, meat, and caramelized onions.
Ingredients:
2 cups basmati rice
1 pound chicken or lamb, cut into pieces
1 large onion, sliced
2 cloves garlic, minced
1-inch ginger, grated
1/2 cup plain yogurt
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon cloves
1/2 teaspoon salt
1/4 cup ghee or butter
2 cups water
1/4 cup chopped cilantro
1/4 cup fried onions
Instructions:
Rinse rice and soak for 30 minutes.
Heat ghee in a pot and sauté onions until golden.
Add garlic, ginger, and spices, cooking until fragrant.
Stir in meat and yogurt, cooking until browned.
Add rice and water, cover, and simmer for 20 minutes.
Garnish with cilantro and fried onions.
