Borani Banjan (Eggplant with Yogurt Sauce)
Country of Origin: Afghanistan
Ingredients:
2 large eggplants, sliced
1 cup plain yogurt
2 cloves garlic, minced
1 large tomato, chopped
1 tsp turmeric
1 tsp salt
½ tsp black pepper
½ cup vegetable oil
½ cup fresh cilantro, chopped
Instructions:
Heat oil in a pan and fry the eggplant slices until golden brown. Drain excess oil.
In the same pan, sauté garlic and tomatoes with turmeric, salt, and pepper. Cook until soft.
Layer the eggplants in a serving dish and pour the tomato mixture over them.
Mix yogurt with a pinch of salt and drizzle over the eggplants.
Garnish with fresh cilantro and serve with naan or rice.
