Cajun 15 Bean Soup (United States - Louisiana)

Ingredients:
8 cups water
1 bag 15-bean mix
1 large onion, diced
1 large red bell pepper, diced
2 celery stalks, diced
6 garlic cloves, minced
7 cups chicken bone broth
2 bay leaves
2 tbsp Cajun seasoning (no salt)
15 oz fire-roasted tomatoes
2 tbsp tomato paste
2 tbsp roasted chicken base
6 Aidell’s Cajun-style andouille sausages, sliced
½ lb HoneyBaked ham, diced
4 slices thick-cut bacon, chopped
Fresh parsley for garnish
Instructions:
Soak beans overnight in 8 cups of water.
Combine beans, onion, red bell pepper, celery, garlic, chicken broth, Cajun seasoning, and bay leaves in a slow cooker.
Cook for 6 hours on high or 12 hours on low.
When beans have 1 hour left on high or 2 hours on low, add tomatoes, tomato paste, sausage, ham, and bacon.
Remove bay leaves, add salt to taste, and garnish with parsley.
