Cajun Shrimp Soup (United States - Louisiana)

Ingredients:
2 tbsp canola oil
2 tbsp all-purpose flour
3 celery ribs, diced
1 medium onion, diced
1 small green pepper, diced
2 green onions, chopped
2 garlic cloves, minced
4 cans (14.75 oz each) cream-style corn
10 oz tomatoes and green chiles
1 bay leaf
¼ tsp white pepper
¼ tsp cayenne pepper
Dash of hot pepper sauce
3 cups small shrimp, peeled and deveined
⅓ cup fresh parsley, chopped
Instructions:
Heat oil in a heavy saucepan over medium heat. Add flour and stir until golden brown (about 6-8 minutes).
Reduce heat to low and add celery, onion, green pepper, and green onions. Cook for 5 minutes.
Add garlic and cook for 1 more minute.
Stir in corn, tomatoes, bay leaf, white pepper, cayenne, and hot sauce. Bring to a boil.
Reduce heat, cover, and simmer for 30-40 minutes.
Stir in shrimp and parsley; heat through. Discard bay leaf and serve.
