Calamari and Tomato Soup (Italy)
Servings: 4 Ingredients:
1 lb calamari, cleaned and sliced
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
4 cups fish or vegetable broth
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until fragrant.
Stir in diced tomatoes, broth, oregano, and red pepper flakes. Bring to a boil.
Reduce heat and add calamari. Simmer for 10 minutes until tender.
Season with salt and pepper. Garnish with fresh parsley and serve hot.
