Caldo de Pescado (Mexico)
A comforting Mexican fish soup with sea bass.
Ingredients:
1 lb sea bass fillets, cut into chunks
4 cups fish stock
1 onion, chopped
2 cloves garlic, minced
2 tomatoes, diced
1 potato, diced
1 carrot, sliced
1 tsp cumin
1 tsp oregano
1 tbsp lime juice
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Heat oil in a pot and sauté onion and garlic until fragrant.
Add tomatoes, potato, carrot, cumin, and oregano. Cook for 5 minutes.
Pour in fish stock and bring to a simmer.
Add sea bass and cook for 10 minutes until fish is tender.
Stir in lime juice, season with salt and pepper, and garnish with cilantro.
