Carbonnade Flamande (Belgium)
A rich and hearty Belgian beef stew simmered in beer, perfect for cold evenings.
Ingredients:
2 lbs beef chuck, cut into chunks
2 tbsp butter
2 large onions, sliced
2 tbsp flour
2 cups Belgian beer (preferably a dark ale)
1 tbsp brown sugar
1 tbsp Dijon mustard
2 bay leaves
1 tsp dried thyme
Salt and pepper to taste
Instructions:
Heat butter in a large pot and brown the beef chunks on all sides. Remove and set aside.
In the same pot, sauté onions until soft and golden.
Sprinkle flour over the onions and stir well.
Return the beef to the pot and pour in the beer.
Add brown sugar, mustard, bay leaves, thyme, salt, and pepper.
Cover and simmer for 2-3 hours until the beef is tender.
Serve with crusty bread or fries.
