Carbonnade Flamande (Belgium)

A rich and hearty Belgian beef stew simmered in beer, perfect for cold evenings.

Ingredients:

  • 2 lbs beef chuck, cut into chunks

  • 2 tbsp butter

  • 2 large onions, sliced

  • 2 tbsp flour

  • 2 cups Belgian beer (preferably a dark ale)

  • 1 tbsp brown sugar

  • 1 tbsp Dijon mustard

  • 2 bay leaves

  • 1 tsp dried thyme

  • Salt and pepper to taste

Instructions:

  • Heat butter in a large pot and brown the beef chunks on all sides. Remove and set aside.

  • In the same pot, sauté onions until soft and golden.

  • Sprinkle flour over the onions and stir well.

  • Return the beef to the pot and pour in the beer.

  • Add brown sugar, mustard, bay leaves, thyme, salt, and pepper.

  • Cover and simmer for 2-3 hours until the beef is tender.

  • Serve with crusty bread or fries.
