Chipotle Chicken Chowder (USA)
Ingredients:
4 chipotle peppers in adobo sauce
2 tbsp adobo sauce
2 cups corn (fresh or frozen)
1 lb chicken breast, diced
1 onion, chopped
2 tomatoes, diced
2 potatoes, cubed
4 cups chicken broth
1 tsp cumin
Salt and pepper to taste
Instructions:
Sauté onions in a pot until translucent.
Add chicken and cook until browned.
Stir in tomatoes, potatoes, corn, and chipotle peppers.
Pour in chicken broth and season with cumin, salt, and pepper.
Simmer for 30 minutes until vegetables are tender.
Serve hot with tortilla chips.
