Chorizo Mexican Breakfast Taco Recipe

Classic Chorizo Mexican Breakfast Tacos (Mexico)

Ingredients:

  • 4 corn tortillas

  • 4 large eggs

  • 200g Mexican chorizo, casings removed

  • 1 tablespoon vegetable oil

  • ¼ cup diced onion

  • ¼ cup fresh cilantro, chopped

  • 1 lime, cut into wedges

  • Salt and pepper to taste

Instructions:

  • Heat vegetable oil in a skillet over medium heat.

  • Add chorizo and cook until browned, breaking it up with a spoon (about 5-7 minutes).

  • In a bowl, whisk eggs with salt and pepper.

  • Remove chorizo from the skillet and set aside.

  • In the same skillet, scramble eggs until cooked through (about 3-4 minutes).

  • Stir chorizo back into the eggs.

  • Warm tortillas on a griddle or in the microwave.

  • Assemble tacos by placing the egg and chorizo mixture onto each tortilla.

  • Top with fresh cilantro, diced onions, and a squeeze of lime juice.

  • Serve immediately.
