Classic Chorizo Mexican Breakfast Tacos (Mexico)
Ingredients:
4 corn tortillas
4 large eggs
200g Mexican chorizo, casings removed
1 tablespoon vegetable oil
¼ cup diced onion
¼ cup fresh cilantro, chopped
1 lime, cut into wedges
Salt and pepper to taste
Instructions:
Heat vegetable oil in a skillet over medium heat.
Add chorizo and cook until browned, breaking it up with a spoon (about 5-7 minutes).
In a bowl, whisk eggs with salt and pepper.
Remove chorizo from the skillet and set aside.
In the same skillet, scramble eggs until cooked through (about 3-4 minutes).
Stir chorizo back into the eggs.
Warm tortillas on a griddle or in the microwave.
Assemble tacos by placing the egg and chorizo mixture onto each tortilla.
Top with fresh cilantro, diced onions, and a squeeze of lime juice.
Serve immediately.
