Colombian Achiote Chicken Soup (Sancocho de Pollo)

Country of Origin: Colombia Ingredients:

  • 1 whole chicken, cut into pieces

  • 1 tbsp achiote seeds

  • 2 potatoes, cubed

  • 2 plantains, sliced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tsp cumin

  • 6 cups chicken broth

  • 1 ear of corn, cut into chunks

  • Salt and pepper to taste

  • Cilantro for garnish

Instructions:

  • Toast achiote seeds and grind into a powder.

  • In a large pot, sauté onion and garlic, then add chicken pieces and brown.

  • Add achiote powder, cumin, broth, potatoes, plantains, and corn.

  • Simmer for 1 hour until chicken is tender.

  • Garnish with cilantro and serve.
