Colombian Achiote Chicken Soup (Sancocho de Pollo)
Country of Origin: Colombia Ingredients:
1 whole chicken, cut into pieces
1 tbsp achiote seeds
2 potatoes, cubed
2 plantains, sliced
1 onion, chopped
3 cloves garlic, minced
1 tsp cumin
6 cups chicken broth
1 ear of corn, cut into chunks
Salt and pepper to taste
Cilantro for garnish
Instructions:
Toast achiote seeds and grind into a powder.
In a large pot, sauté onion and garlic, then add chicken pieces and brown.
Add achiote powder, cumin, broth, potatoes, plantains, and corn.
Simmer for 1 hour until chicken is tender.
Garnish with cilantro and serve.
