Corned Beef and Cabbage (Ireland)
A classic Irish dish featuring juicy, succulent corned beef paired with delicately poached winter vegetables.
Ingredients:
4 lb corned beef brisket
1 head cabbage, cut into wedges
4 large carrots, peeled and chopped
6 potatoes, peeled and quartered
1 onion, peeled and quartered
3 cloves garlic, minced
1 tbsp mustard seeds
1 tbsp black peppercorns
2 bay leaves
Instructions:
Place the corned beef in a large pot and cover with water. Add mustard seeds, peppercorns, bay leaves, and garlic.
Bring to a boil, then reduce heat and simmer for about 3 hours until the meat is tender.
Add potatoes, carrots, and onion to the pot. Cook for 20 minutes.
Add cabbage wedges and cook for another 10-15 minutes until all vegetables are tender.
Remove the meat and let it rest for 10 minutes before slicing. Serve with vegetables and broth.
