Corned Beef and Cabbage (Ireland)

A classic Irish dish featuring juicy, succulent corned beef paired with delicately poached winter vegetables.

Ingredients:

  • 4 lb corned beef brisket

  • 1 head cabbage, cut into wedges

  • 4 large carrots, peeled and chopped

  • 6 potatoes, peeled and quartered

  • 1 onion, peeled and quartered

  • 3 cloves garlic, minced

  • 1 tbsp mustard seeds

  • 1 tbsp black peppercorns

  • 2 bay leaves

Instructions:

  • Place the corned beef in a large pot and cover with water. Add mustard seeds, peppercorns, bay leaves, and garlic.

  • Bring to a boil, then reduce heat and simmer for about 3 hours until the meat is tender.

  • Add potatoes, carrots, and onion to the pot. Cook for 20 minutes.

  • Add cabbage wedges and cook for another 10-15 minutes until all vegetables are tender.

  • Remove the meat and let it rest for 10 minutes before slicing. Serve with vegetables and broth.
