Creamy Tomato Basil Soup (Warm or Chilled) (USA)

2 lbs fresh ripe tomatoes, preferably heirloom or vine-ripened
1 red bell pepper, roasted and peeled
½ small red onion, finely chopped
2 cloves garlic, minced
½ cup fresh basil leaves, plus extra for garnish
1 cup heavy cream (or substitute with Greek yogurt for a tangy twist)
2 tbsp olive oil
1 tbsp balsamic vinegar
½ tsp smoked paprika (for depth)
Salt & black pepper, to taste
1 cup vegetable broth, chilled (for cold version) or warm (for hot version)
Juice of ½ lemon, for brightness
Instructions
Roast the bell pepper: Place it over an open flame or under a broiler until charred. Peel and remove seeds.
Blanch the tomatoes: Score the bottoms, then briefly boil and transfer to ice water. Peel and chop.
Blend the base: In a blender, combine tomatoes, roasted bell pepper, onion, garlic, basil, olive oil, balsamic vinegar, smoked paprika, salt, and pepper. Blend until smooth.
Incorporate cream: Stir in heavy cream (or Greek yogurt) and vegetable broth. Blend again until silky.
Adjust seasoning: Add lemon juice and more salt or pepper if needed.
Choose your serving style:
Warm version: Heat gently in a saucepan over low heat for 5-10 minutes.
Chilled version: Refrigerate for at least 2 hours to allow flavors to meld.
Serve: Garnish with fresh basil, a drizzle of olive oil, and a dollop of cream.
