Embutido (Filipino Meatloaf)
Ingredients:
1 pound ground pork
½ cup breadcrumbs
1 egg
½ cup grated carrot
½ cup bell pepper, chopped
¼ cup raisins
¼ cup grated cheese
2 hard-boiled eggs, peeled
½ teaspoon salt
½ teaspoon black pepper
Instructions:
Preheat oven to 350°F (175°C).
In a bowl, mix ground pork, breadcrumbs, egg, carrot, bell pepper, raisins, cheese, salt, and pepper.
Flatten mixture onto aluminum foil.
Place hard-boiled eggs in the center and roll into a log.
Wrap tightly in foil and bake for 45 minutes.
Let cool, then slice and serve.
