Lentil and Lavender Soup (France)
Servings: 4
Calories: ~250 per serving
Ingredients:
1 cup French lentils
1 medium onion, chopped
2 carrots, diced
2 celery stalks, chopped
2 tbsp olive oil
4 cups vegetable broth
1 tsp dried lavender
1 tsp Herbs de Provence
1 clove garlic, minced
½ tsp salt
½ tsp black pepper
1 tbsp lemon juice
Instructions:
Sauté the vegetables: Heat olive oil in a pot and cook onions, carrots, and celery until softened.
Add lentils and broth: Stir in lentils, vegetable broth, garlic, and Herbs de Provence. Bring to a boil.
Simmer: Reduce heat and let simmer for 30 minutes until lentils are tender.
Infuse with lavender: Add dried lavender and lemon juice, stirring well.
Serve: Enjoy warm, garnished with fresh herbs or a drizzle of olive oil.
