Lentil and Lavender Soup (France)

  • Servings: 4

  • Calories: ~250 per serving

  • Ingredients:

    • 1 cup French lentils

    • 1 medium onion, chopped

    • 2 carrots, diced

    • 2 celery stalks, chopped

    • 2 tbsp olive oil

    • 4 cups vegetable broth

    • 1 tsp dried lavender

    • 1 tsp Herbs de Provence

    • 1 clove garlic, minced

    • ½ tsp salt

    • ½ tsp black pepper

    • 1 tbsp lemon juice

Instructions:

  • Sauté the vegetables: Heat olive oil in a pot and cook onions, carrots, and celery until softened.

  • Add lentils and broth: Stir in lentils, vegetable broth, garlic, and Herbs de Provence. Bring to a boil.

  • Simmer: Reduce heat and let simmer for 30 minutes until lentils are tender.

  • Infuse with lavender: Add dried lavender and lemon juice, stirring well.

  • Serve: Enjoy warm, garnished with fresh herbs or a drizzle of olive oil.
