A classic French dish with deep, rich flavors, perfect for a cozy dinner.
Ingredients:
3 lbs bone-in beef short ribs
2 tbsp olive oil
2 large onions, sliced
4 cloves garlic, minced
2 cups dry red wine (Cabernet Sauvignon or Merlot)
2 cups beef broth
1 tbsp tomato paste
2 bay leaves
1 tsp dried thyme
4 large potatoes, peeled and quartered
Salt and pepper to taste
Instructions:
Heat olive oil in a large Dutch oven and brown the short ribs on all sides. Remove and set aside.
In the same pot, sauté onions and garlic until soft.
Stir in tomato paste, then pour in red wine to deglaze the pot.
Return the short ribs to the pot and add beef broth, bay leaves, thyme, salt, and pepper.
Cover and simmer for 2.5-3 hours until the meat is tender.
Add potatoes in the last 45 minutes of cooking.
