French Red Wine Braised Short Ribs (France)

A classic French dish with deep, rich flavors, perfect for a cozy dinner.

Ingredients:

  • 3 lbs bone-in beef short ribs

  • 2 tbsp olive oil

  • 2 large onions, sliced

  • 4 cloves garlic, minced

  • 2 cups dry red wine (Cabernet Sauvignon or Merlot)

  • 2 cups beef broth

  • 1 tbsp tomato paste

  • 2 bay leaves

  • 1 tsp dried thyme

  • 4 large potatoes, peeled and quartered

  • Salt and pepper to taste

Instructions:

  • Heat olive oil in a large Dutch oven and brown the short ribs on all sides. Remove and set aside.

  • In the same pot, sauté onions and garlic until soft.

  • Stir in tomato paste, then pour in red wine to deglaze the pot.

  • Return the short ribs to the pot and add beef broth, bay leaves, thyme, salt, and pepper.

  • Cover and simmer for 2.5-3 hours until the meat is tender.

  • Add potatoes in the last 45 minutes of cooking.

  • Serve with crusty bread or mashed potatoes.
