Gajar Ka Halwa (India)
A rich and aromatic Indian dessert made by slow-cooking grated carrots with ghee, milk, and sugar.
Ingredients:
4 cups grated carrots
2 cups whole milk
½ cup sugar
¼ cup ghee (clarified butter)
½ teaspoon cardamom powder
¼ cup chopped nuts (almonds, cashews)
2 tablespoons raisins
Instructions:
Heat ghee in a pan and sauté grated carrots for 5 minutes.
Add milk and cook on medium heat until the milk evaporates.
Stir in sugar and cardamom powder, cooking until the mixture thickens.
Garnish with nuts and raisins. Serve warm.
