Ghormeh Sabzi (Iran)
A Persian herb and lamb stew with a tangy, citrusy flavor.
Ingredients:
2 lbs lamb, cubed
1 large onion, chopped
1 cup fresh parsley, chopped
1 cup fresh cilantro, chopped
½ cup dried fenugreek leaves
1 cup kidney beans, soaked
2 dried limes, pierced
4 cups water
1 tsp turmeric
Salt and pepper to taste
¼ cup vegetable oil
Instructions:
Sauté onions in oil until golden.
Add lamb, turmeric, and brown.
Stir in herbs and cook for 10 minutes.
Add dried limes, beans, and water.
Simmer for 2 hours until tender.
Serve with Persian rice & garnish with Pine Nuts
