Greek Chickpea Soup (Revithia)

Servings: 4 Calories: 749 per serving Cooking Time: 2 hours

Ingredients:

  • 1 lb (16 oz) Dry Chickpeas

  • 1 Large Red Onion, chopped

  • ½ cup Olive Oil

  • 1 Bay Leaf

  • 2 tsp Dried Oregano

  • Black Pepper to taste

  • 2 Lemons, juiced

  • 2 tbsp All-Purpose Flour

Instructions:

  • Soak chickpeas overnight, then rinse well.

  • In a large pot, boil chickpeas for 15 minutes, skimming off froth. Drain and replace water.

  • Add olive oil, onion, oregano, and bay leaf. Simmer for 1-2 hours until chickpeas are soft.

  • In a small bowl, mix flour with lemon juice and a few tablespoons of soup broth until smooth. Stir mixture into the soup to thicken.

  • Serve warm with Kalamata olives and crusty bread.
