Greek Chickpea Soup (Revithia)
Servings: 4 Calories: 749 per serving Cooking Time: 2 hours
Ingredients:
1 lb (16 oz) Dry Chickpeas
1 Large Red Onion, chopped
½ cup Olive Oil
1 Bay Leaf
2 tsp Dried Oregano
Black Pepper to taste
2 Lemons, juiced
2 tbsp All-Purpose Flour
Instructions:
Soak chickpeas overnight, then rinse well.
In a large pot, boil chickpeas for 15 minutes, skimming off froth. Drain and replace water.
Add olive oil, onion, oregano, and bay leaf. Simmer for 1-2 hours until chickpeas are soft.
In a small bowl, mix flour with lemon juice and a few tablespoons of soup broth until smooth. Stir mixture into the soup to thicken.
Serve warm with Kalamata olives and crusty bread.
