Greek Honey Lentil Soup (Fakes me Meli)

Servings: 4 Country of Origin: Greece

Ingredients

  • 1 cup lentils

  • 4 cups vegetable broth

  • 1 onion (diced)

  • 2 cloves garlic (minced)

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1 tsp cumin

  • 1 tsp oregano

  • Salt and pepper to taste

  • 1 tbsp lemon juice

Instructions

  • Rinse lentils and soak for 30 minutes.

  • In a pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.

  • Add lentils, broth, cumin, oregano, salt, and pepper. Simmer for 30 minutes.

  • Stir in honey and lemon juice. Cook for another 5 minutes.

  • Serve warm with crusty bread.
