Greek Honey Lentil Soup (Fakes me Meli)
Servings: 4 Country of Origin: Greece
Ingredients
1 cup lentils
4 cups vegetable broth
1 onion (diced)
2 cloves garlic (minced)
2 tbsp olive oil
2 tbsp honey
1 tsp cumin
1 tsp oregano
Salt and pepper to taste
1 tbsp lemon juice
Instructions
Rinse lentils and soak for 30 minutes.
In a pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
Add lentils, broth, cumin, oregano, salt, and pepper. Simmer for 30 minutes.
Stir in honey and lemon juice. Cook for another 5 minutes.
Serve warm with crusty bread.
