Grilled Sea Bass with Tomato and Olive Salsa, served with Orzo Pasta

For the Grilled Sea Bass:
2 sea bass fillets (about 6-8 oz each)
1 tbsp olive oil
1 tsp lemon zest
2 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
1 garlic clove, minced
For the Tomato and Olive Salsa:
1 cup cherry tomatoes, diced
¼ cup Kalamata olives, pitted and chopped
1 tbsp capers, drained
2 tbsp red onion, finely diced
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tbsp olive oil
1 tbsp balsamic vinegar
½ tsp salt
¼ tsp black pepper
For the Orzo Pasta:
1 cup orzo pasta
2 cups vegetable or chicken broth
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tbsp grated Parmesan cheese (optional)
½ tsp salt
¼ tsp black pepper
Instructions:
1. Prepare the Tomato and Olive Salsa
In a bowl, mix diced tomatoes, Kalamata olives, capers, red onion, parsley, basil, olive oil, balsamic vinegar, salt, and black pepper.
Cover and let it sit for 20 minutes, allowing the flavors to meld.
2. Cook the Orzo Pasta
Bring broth to a boil, add orzo, and cook according to package instructions (about 8-10 minutes).
Drain excess broth, then mix in olive oil, lemon juice, Parmesan (if using), salt, and black pepper.
3. Grill the Sea Bass
Preheat a grill or grill pan over medium-high heat.
Pat sea bass fillets dry, then brush with olive oil, lemon zest, lemon juice, salt, pepper, oregano, and minced garlic.
Grill fillets for 3-4 minutes per side, until flaky and lightly charred.
4. Assemble the Dish
Place grilled sea bass on a plate, topped with tomato and olive salsa.
Serve alongside warm orzo pasta and enjoy!
