Grilled Sea Bass Recipe

Grilled Sea Bass with Tomato and Olive Salsa, served with Orzo Pasta
Origin: Greece 

Ingredients:

For the Grilled Sea Bass:

  • 2 sea bass fillets (about 6-8 oz each)

  • 1 tbsp olive oil

  • 1 tsp lemon zest

  • 2 tbsp lemon juice

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano

  • 1 garlic clove, minced

For the Tomato and Olive Salsa:

  • 1 cup cherry tomatoes, diced

  • ¼ cup Kalamata olives, pitted and chopped

  • 1 tbsp capers, drained

  • 2 tbsp red onion, finely diced

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh basil, chopped

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • ½ tsp salt

  • ¼ tsp black pepper

For the Orzo Pasta:

  • 1 cup orzo pasta

  • 2 cups vegetable or chicken broth

  • 1 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tbsp grated Parmesan cheese (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

Instructions:

1. Prepare the Tomato and Olive Salsa

  • In a bowl, mix diced tomatoes, Kalamata olives, capers, red onion, parsley, basil, olive oil, balsamic vinegar, salt, and black pepper.

  • Cover and let it sit for 20 minutes, allowing the flavors to meld.

2. Cook the Orzo Pasta

  • Bring broth to a boil, add orzo, and cook according to package instructions (about 8-10 minutes).

  • Drain excess broth, then mix in olive oil, lemon juice, Parmesan (if using), salt, and black pepper.

3. Grill the Sea Bass

  • Preheat a grill or grill pan over medium-high heat.

  • Pat sea bass fillets dry, then brush with olive oil, lemon zest, lemon juice, salt, pepper, oregano, and minced garlic.

  • Grill fillets for 3-4 minutes per side, until flaky and lightly charred.

4. Assemble the Dish

  • Place grilled sea bass on a plate, topped with tomato and olive salsa.

  • Serve alongside warm orzo pasta and enjoy!
