Hearty Chickpea Soup (Italy)
Servings: 4 Calories: 629 per serving Cooking Time: 1 hour 50 minutes
Ingredients:
2 tbsp Olive Oil
½ Onion, minced
1 Garlic clove, minced
1 Celery stalk, minced
1 Potato, diced
2¼ cups Chickpeas
1 can Tomatoes Pelati
3 cups Water
2 tbsp Fresh Parsley
½ tsp Basil
½ tsp Oregano
½ tsp Salt
Hot Pepper Flakes (optional)
1½ cups Pasta (Orecchiette preferred)
Instructions:
In a large pot, heat olive oil and sauté onion, garlic, and celery for 2 minutes.
Add potatoes, chickpeas, tomatoes, water, and spices. Simmer for 60 minutes.
Cook pasta separately until al dente, then drain.
Blend half the soup until smooth, return to the pot, add pasta, and heat.
Serve with grated parmesan cheese if desired. Enjoy!
