Hungarian Apple Soup (Hungary)

This savory apple soup gets its richness from Yukon Gold potatoes and a touch of heat from paprika.

Ingredients

  • 2 tsp canola oil

  • 1 medium tart apple, peeled and chopped

  • ¾ cup Yukon Gold potato, diced

  • ⅓ cup yellow onion, chopped

  • ¼ cup celery, chopped

  • ¼ tsp salt

  • ¼ tsp dried sage

  • Pinch of paprika

  • Ground pepper, to taste

  • 1 (14-ounce) can reduced-sodium chicken broth

  • 3 tbsp reduced-fat sour cream

Instructions

  • Heat oil in a saucepan over medium heat. Add apple, potato, onion, and celery. Cook, stirring occasionally, until softened (about 5 minutes).

  • Stir in salt, sage, paprika, and pepper. Add broth and bring to a boil.

  • Reduce heat and simmer until potatoes are tender (about 20 minutes).

  • Puree the soup using an immersion blender or in batches in a regular blender.

  • Stir in sour cream and serve warm.
