Hungarian Apple Soup (Hungary)
This savory apple soup gets its richness from Yukon Gold potatoes and a touch of heat from paprika.
Ingredients
2 tsp canola oil
1 medium tart apple, peeled and chopped
¾ cup Yukon Gold potato, diced
⅓ cup yellow onion, chopped
¼ cup celery, chopped
¼ tsp salt
¼ tsp dried sage
Pinch of paprika
Ground pepper, to taste
1 (14-ounce) can reduced-sodium chicken broth
3 tbsp reduced-fat sour cream
Instructions
Heat oil in a saucepan over medium heat. Add apple, potato, onion, and celery. Cook, stirring occasionally, until softened (about 5 minutes).
Stir in salt, sage, paprika, and pepper. Add broth and bring to a boil.
Reduce heat and simmer until potatoes are tender (about 20 minutes).
Puree the soup using an immersion blender or in batches in a regular blender.
Stir in sour cream and serve warm.
