Italian Almond Cake (Torta di Mandorle) – Italy
Ingredients:
2 cups almond flour
3/4 cup sugar
3 large eggs
1/2 cup olive oil
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp baking powder
Zest of 1 lemon
Powdered sugar for dusting
Instructions:
Preheat oven to 350°F (175°C). Grease a cake pan.
In a bowl, whisk eggs and sugar until light and fluffy.
Add olive oil, vanilla, almond extract, and lemon zest. Mix well.
Fold in almond flour and baking powder until combined.
Pour batter into the pan and bake for 30-35 minutes.
Let cool, then dust with powdered sugar before serving.
