Italian Braised Short Ribs with Red Wine (Italy)

A rustic Italian dish with bold flavors.

Ingredients:

  • 3 lbs beef short ribs

  • 2 tbsp butter

  • 2 large onions, sliced

  • 3 cloves garlic, minced

  • 2 cups red wine (Chianti or Sangiovese)

  • 2 cups beef broth

  • 1 tbsp balsamic vinegar

  • 1 tsp dried oregano

  • 4 large potatoes, peeled and cubed

  • Salt and pepper to taste

Instructions:

  • Melt butter in a large pot and brown the short ribs.

  • Remove ribs and sauté onions and garlic until fragrant.

  • Pour in red wine and balsamic vinegar, scraping up browned bits.

  • Return ribs to the pot and add beef broth, oregano, salt, and pepper.

  • Cover and simmer for 2.5-3 hours until tender.

  • Add potatoes in the last 40 minutes of cooking.

  • Serve with polenta or crusty bread.
