Italian Stuffed Portabella Mushrooms

Country of Origin: Italy

Ingredients:

  • 4 large portabella mushrooms

  • 1 cup ricotta cheese

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup chopped spinach

  • 1 clove garlic, minced

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  • Preheat oven to 375°F (190°C).

  • Remove stems from mushrooms and brush caps with olive oil.

  • Mix ricotta, Parmesan, spinach, garlic, salt, and pepper.

  • Stuff mushrooms with the mixture and bake for 20 minutes.
