Italian Wedding Soup (Italy)
A light yet hearty soup with tender meatballs and greens.
Ingredients:
1 lb ground beef or pork
½ cup breadcrumbs
¼ cup grated Parmesan cheese
1 egg
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
6 cups chicken broth
1 cup small pasta (like acini di pepe)
2 cups spinach or escarole, chopped
Instructions:
Mix ground meat, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Form small meatballs.
Bring chicken broth to a boil, add pasta, and cook until tender.
Add meatballs and simmer for 10 minutes.
Stir in spinach and cook for 2 more minutes.
Serve hot with extra Parmesan.
