Jamaican Banana Bread (Jamaica)
Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
½ cup unsalted butter, softened
¾ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups mashed ripe bananas
½ cup shredded coconut
½ cup chopped pecans or walnuts
Instructions:
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, cream butter and brown sugar until fluffy.
Add eggs one at a time, then stir in vanilla and mashed bananas.
Gradually add dry ingredients, mixing until combined.
Fold in shredded coconut and nuts.
Pour batter into the loaf pan and bake for 50–55 minutes.
Cool before slicing and enjoy!
