Jamaican Banana Bread (Jamaica)

Ingredients:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • ½ cup unsalted butter, softened

  • ¾ cup brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups mashed ripe bananas

  • ½ cup shredded coconut

  • ½ cup chopped pecans or walnuts

Instructions:

  • Preheat oven to 350°F (175°C). Grease a loaf pan.

  • In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.

  • In another bowl, cream butter and brown sugar until fluffy.

  • Add eggs one at a time, then stir in vanilla and mashed bananas.

  • Gradually add dry ingredients, mixing until combined.

  • Fold in shredded coconut and nuts.

  • Pour batter into the loaf pan and bake for 50–55 minutes.

  • Cool before slicing and enjoy!
