Kirschsuppe (German Cherry Soup)

Ingredients:
1 ½ lbs ripe black cherries
⅔ cup fruity white wine
1 cinnamon stick
⅔ cup water
2 tbsp sugar
1 lemon (zested and juiced)
1 ¼ cups crème fraîche
2 tbsp brandy or kirsch
Instructions:
Prepare the cherries: Wash and pit them.
Cook the base: In a large pot, combine cherries, white wine, cinnamon stick, water, and sugar. Bring to a boil.
Simmer: Reduce heat and let simmer for 10-15 minutes until cherries are tender.
Blend: Remove the cinnamon stick and puree the mixture.
Add lemon: Stir in the juice of half a lemon.
Finish with crème fraîche: Whisk together crème fraîche and kirsch, then swirl into the soup.
Serve: Enjoy chilled or warm, garnished with whole cherries and a dollop of crème fraîche.
