Lemon and honey panna cotta with fresh berries

Origin: Italy

Ingredients:

For the Panna Cotta:

  • 2 cups heavy cream

  • ½ cup whole milk

  • ¼ cup honey

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 2 tsp fresh lemon juice

  • 1 packet (about 2 ¼ tsp) unflavored gelatin

  • 3 tbsp cold water

For the Berry Topping:

  • 1 cup fresh berries (strawberries, blueberries, raspberries)

  • 1 tbsp honey

  • 1 tsp lemon juice

Instructions:

1. Prepare the Panna Cotta

  • In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes until it blooms.

  • In a saucepan over medium heat, combine heavy cream, milk, honey, vanilla, lemon zest, and lemon juice.

  • Heat until warm but do not boil, stirring occasionally.

  • Remove from heat and whisk in bloomed gelatin until completely dissolved.

2. Set the Panna Cotta

  • Pour the mixture into serving glasses or ramekins.

  • Refrigerate for 4-6 hours, or until fully set.

3. Prepare the Berry Topping

  • In a bowl, mix fresh berries with honey and lemon juice.

  • Let them sit for 15 minutes, allowing the juices to develop.

4. Serve

  • Spoon berry topping over chilled panna cotta.

  • Enjoy this smooth, citrusy, and naturally sweet treat!
