Mexican Red Pozole
Country of Origin: Mexico Ingredients:
2 lbs pork shoulder, cubed
1 cup dried hominy
1 tbsp achiote seeds
2 dried guajillo chilies
1 onion, chopped
4 cloves garlic, minced
1 tsp cumin
1 tsp oregano
6 cups chicken broth
Salt and pepper to taste
Garnishes: shredded cabbage, radish slices, lime wedges, chopped cilantro
Instructions:
Soak hominy overnight, then boil until tender.
Toast achiote seeds and grind them into a powder.
Rehydrate guajillo chilies in hot water, then blend with garlic and onion.
In a large pot, brown pork cubes, then add blended chili mixture, achiote powder, cumin, oregano, and broth.
Simmer for 2 hours, then add hominy and cook for another 30 minutes.
Serve with garnishes.
