Moroccan Chicken Tagine

Country of Origin: Morocco

Ingredients:

  • 2 lbs chicken thighs

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp allspice

  • 1 tsp cinnamon

  • 1 tsp cumin

  • ½ tsp turmeric

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 cup chicken broth

  • ½ cup dried apricots

  • ½ cup almonds

  • 2 tbsp olive oil

Instructions:

  • Heat olive oil in a tagine or deep pan.

  • Sauté onions and garlic until soft.

  • Add chicken and brown on all sides.

  • Stir in allspice, cinnamon, cumin, turmeric, salt, and pepper.

  • Pour in chicken broth and add apricots and almonds.

  • Cover and simmer for 45 minutes until chicken is tender.

  • Serve with couscous or flatbread.
