Moroccan Chicken Tagine
Country of Origin: Morocco
Ingredients:
2 lbs chicken thighs
1 onion, chopped
2 cloves garlic, minced
1 tsp allspice
1 tsp cinnamon
1 tsp cumin
½ tsp turmeric
½ tsp salt
½ tsp black pepper
1 cup chicken broth
½ cup dried apricots
½ cup almonds
2 tbsp olive oil
Instructions:
Heat olive oil in a tagine or deep pan.
Sauté onions and garlic until soft.
Add chicken and brown on all sides.
Stir in allspice, cinnamon, cumin, turmeric, salt, and pepper.
Pour in chicken broth and add apricots and almonds.
Cover and simmer for 45 minutes until chicken is tender.
Serve with couscous or flatbread.
