Moroccan Spiced Chickpea Soup (Morocco)
Servings: 6 Calories: 339 per serving Cooking Time: 1 hour 10 minutes
Ingredients:
¼ cup Extra-Virgin Olive Oil
1 Large Onion, chopped
8 Garlic cloves, minced
1 tsp Ground Cinnamon
1 tsp Ground Cumin
⅛ tsp Cayenne Pepper
1 heaping tsp Sweet Paprika
1 can (14.5 oz) Tomatoes
3 cans (15 oz each) Chickpeas
1 quart Reduced-Sodium Chicken Broth
1 tsp Sugar
Salt & Black Pepper to taste
1 package (5 oz) Pre-Washed Baby Spinach
Instructions:
Heat olive oil in a pot, sauté onion and garlic until soft.
Add cinnamon, cumin, cayenne, and paprika. Stir for 1 minute.
Add tomatoes, chickpeas, broth, sugar, salt, and pepper. Simmer for 45 minutes.
Stir in spinach and cook until wilted. Serve warm.
