Mother Gothel’s Hazelnut Soup Recipe

Servings: 4

Ingredients

  • 1 cup hazelnuts (roasted and shelled)

  • 2 parsnips (peeled and chopped)

  • 1 onion (diced)

  • 2 cloves garlic (minced)

  • 4 cups vegetable broth

  • 1 cup heavy cream

  • 1 tbsp butter

  • Salt and pepper to taste

  • 1 tsp thyme (optional)

Instructions

  • Roast hazelnuts at 350°F (175°C) for 20-30 minutes until lightly browned. Remove skins by rubbing them in a clean dish towel.

  • In a large pot, melt butter over medium heat. Add onions and garlic, sauté until fragrant.

  • Add parsnips and hazelnuts, cooking for another 5 minutes.

  • Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.

  • Blend the mixture until smooth. Stir in heavy cream and season with salt, pepper, and thyme.

  • Simmer for another 5 minutes, then serve warm.
