Mother Gothel’s Hazelnut Soup Recipe

Ingredients
1 cup hazelnuts (roasted and shelled)
2 parsnips (peeled and chopped)
1 onion (diced)
2 cloves garlic (minced)
4 cups vegetable broth
1 cup heavy cream
1 tbsp butter
Salt and pepper to taste
1 tsp thyme (optional)
Instructions
Roast hazelnuts at 350°F (175°C) for 20-30 minutes until lightly browned. Remove skins by rubbing them in a clean dish towel.
In a large pot, melt butter over medium heat. Add onions and garlic, sauté until fragrant.
Add parsnips and hazelnuts, cooking for another 5 minutes.
Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the mixture until smooth. Stir in heavy cream and season with salt, pepper, and thyme.
Simmer for another 5 minutes, then serve warm.
