Palestinian Roast Chicken with Sumac and Red Onions (Mussakhan)

Country of Origin: Palestine

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 2 tbsp olive oil

  • 1 tbsp ground sumac

  • 1 tsp ground cumin

  • 1 tsp salt

  • 1 red onion, thinly sliced

  • 4 pieces of flatbread

Instructions:

  • Preheat oven to 375°F (190°C).

  • Rub chicken thighs with olive oil, sumac, cumin, and salt.

  • Place on a baking sheet with sliced red onions.

  • Roast for 35-40 minutes until golden brown and cooked through.

  • Serve over warm flatbread.
