Persian Sumac-Spiced Barley Soup

Servings: 4

Ingredients:

  • ½ cup pearl barley

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 4 cups vegetable broth

  • 1 teaspoon ground sumac

  • 1 teaspoon turmeric

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Juice of ½ lemon

  • Fresh mint for garnish

Instructions:

  • Heat olive oil in a pot over medium heat. Sauté onions and garlic until fragrant.

  • Add barley, vegetable broth, sumac, turmeric, salt, and pepper.

  • Bring to a boil, then reduce heat and simmer for 40 minutes until barley is tender.

  • Stir in lemon juice and garnish with fresh mint.

  • Serve warm with flatbread.
