Persian Sumac-Spiced Barley Soup

Ingredients:
½ cup pearl barley
1 medium onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
4 cups vegetable broth
1 teaspoon ground sumac
1 teaspoon turmeric
½ teaspoon salt
½ teaspoon black pepper
Juice of ½ lemon
Fresh mint for garnish
Instructions:
Heat olive oil in a pot over medium heat. Sauté onions and garlic until fragrant.
Add barley, vegetable broth, sumac, turmeric, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 40 minutes until barley is tender.
Stir in lemon juice and garnish with fresh mint.
Serve warm with flatbread.
