Ceviche (Peru)

Ingredients:

  • 1 lb (450g) fresh white fish (such as sea bass), diced

  • ½ cup lime juice

  • ½ cup lemon juice

  • 1 small red onion, thinly sliced

  • 1 small chili pepper, finely chopped

  • ½ cup chopped cilantro

  • Salt and pepper to taste

Instructions:

  • Place fish in a bowl and cover with lime and lemon juice.

  • Let it marinate for 15-20 minutes until the fish turns opaque.

  • Add onion, chili, cilantro, salt, and pepper.

  • Serve chilled with tortilla chips or sweet potato slices.
