Potato Soup with Horseradish (Germany)

Calories: 471 per serving
Ingredients:
1.5 lbs potatoes, peeled and cubed
1 onion, chopped
3.5 oz cauliflower florets
8 strips bacon
30g butter
5 cups vegetable broth
1 tbsp olive oil
1 cup sour cream
4.5 tbsp preserved horseradish
Salt & pepper to taste
Parsley for garnish
Instructions:
Preheat oven to 200°C/400°F.
Sauté onions in butter until translucent, then add potatoes and fry for 2 minutes.
Add vegetable broth, lower heat, and simmer for 25 minutes.
Roast cauliflower florets with olive oil, salt, and pepper for 12 minutes.
Fry bacon until crispy.
Mix sour cream with horseradish.
Blend soup until smooth, then stir in horseradish mixture.
Garnish with roasted cauliflower, bacon, and parsley. Enjoy
