Puerto Rican Achiote Seafood Soup (Asopao de Mariscos)
Country of Origin: Puerto Rico
Ingredients:
1 lb shrimp, peeled and deveined
1 lb fish fillets, cubed
1 tbsp achiote seeds
1 onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
1 tsp oregano
1 tsp cumin
6 cups seafood broth
1 cup rice
Salt and pepper to taste
Lime wedges for serving
Instructions:
Toast achiote seeds and grind into a powder.
In a large pot, sauté onion, garlic, and bell pepper.
Add achiote powder, oregano, cumin, and broth.
Stir in rice and simmer for 30 minutes.
Add shrimp and fish, cooking until seafood is tender.
Serve with lime wedges.
