Puerto Rican Achiote Seafood Soup (Asopao de Mariscos)

Country of Origin: Puerto Rico

Ingredients:

  • 1 lb shrimp, peeled and deveined

  • 1 lb fish fillets, cubed

  • 1 tbsp achiote seeds

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped

  • 1 tsp oregano

  • 1 tsp cumin

  • 6 cups seafood broth

  • 1 cup rice

  • Salt and pepper to taste

  • Lime wedges for serving

Instructions:

  • Toast achiote seeds and grind into a powder.

  • In a large pot, sauté onion, garlic, and bell pepper.

  • Add achiote powder, oregano, cumin, and broth.

  • Stir in rice and simmer for 30 minutes.

  • Add shrimp and fish, cooking until seafood is tender.

  • Serve with lime wedges.
