Sancocho (Colombia)
Servings: 6
Ingredients:
2 lbs beef or chicken
2 ears corn, cut into thirds
2 plantains, sliced
3 potatoes, cubed
1 yucca root, peeled and cubed
1 onion, chopped
2 cloves garlic, minced
1 tbsp cumin
8 cups water
Salt and pepper to taste
Instructions:
In a large pot, boil meat with onion, garlic, and cumin for 30 minutes.
Add corn, plantains, potatoes, and yucca. Simmer for 45 minutes.
Season with salt and pepper. Serve hot.
