Sancocho (Colombia)

Servings: 6

Ingredients:

  • 2 lbs beef or chicken

  • 2 ears corn, cut into thirds

  • 2 plantains, sliced

  • 3 potatoes, cubed

  • 1 yucca root, peeled and cubed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp cumin

  • 8 cups water

  • Salt and pepper to taste

Instructions:

  • In a large pot, boil meat with onion, garlic, and cumin for 30 minutes.

  • Add corn, plantains, potatoes, and yucca. Simmer for 45 minutes.

  • Season with salt and pepper. Serve hot.
