1. Spanakopita (Greece)
Ingredients:
1 lb (450g) fresh spinach, chopped
1 cup feta cheese, crumbled
1 small onion, finely chopped
2 tbsp olive oil
1 egg, beaten
1 package phyllo dough
½ cup melted butter
Instructions:
Preheat oven to 375°F (190°C).
Sauté onion in olive oil until soft, then add spinach and cook until wilted.
Remove from heat and mix in feta cheese and beaten egg.
Cut phyllo dough into strips, brush with melted butter, and place a spoonful of filling at one end.
Fold into triangles and bake for 20 minutes until golden brown.
