Striped Bass and Broccoli Rabe Chowder (United States)
Servings: 6
Ingredients:
1 lb striped bass fillet, cubed
1 ¼ lbs broccoli rabe, chopped
¼ cup toasted pine nuts
1 garlic clove, minced
1 ½ tbsp capers, chopped
1 tbsp lemon zest
½ cup grated Parmesan
½ cup olive oil
2 medium leeks, sliced
1 cup stewed tomatoes
½ lb Yukon Gold potatoes, sliced
3 cups fish stock
¼ cup light cream
Instructions:
Blend broccoli rabe, pine nuts, garlic, capers, lemon zest, Parmesan, and olive oil into a pesto.
Sauté leeks in olive oil, add tomatoes and potatoes.
Pour in fish stock and simmer for 20 minutes.
Add striped bass and light cream, cook for 5 more minutes.
Stir in pesto and serve.
