Sweet Potato Gnocchi with Fried Sage (Italy)
Ingredients:
2 medium sweet potatoes, baked and mashed
1 ½ cups all-purpose flour
1 egg
½ tsp salt
2 tbsp butter
10 fresh sage leaves
Instructions:
Mix mashed sweet potatoes, flour, egg, and salt to form a dough.
Roll into ropes and cut into small gnocchi pieces.
Boil gnocchi until they float, then drain.
In a skillet, melt butter and fry sage leaves.
Toss gnocchi in the sage butter and serve.
