Sweet Potato Gnocchi with Fried Sage (Italy)

Ingredients:

  • 2 medium sweet potatoes, baked and mashed

  • 1 ½ cups all-purpose flour

  • 1 egg

  • ½ tsp salt

  • 2 tbsp butter

  • 10 fresh sage leaves

Instructions:

  • Mix mashed sweet potatoes, flour, egg, and salt to form a dough.

  • Roll into ropes and cut into small gnocchi pieces.

  • Boil gnocchi until they float, then drain.

  • In a skillet, melt butter and fry sage leaves.

  • Toss gnocchi in the sage butter and serve.
