Authentic Texas Chili Con Carne (USA)

Ingredients:

  • 3 lbs beef chuck, cut into 1-inch cubes

  • 3 tablespoons vegetable oil

  • 2 dried ancho chiles, stemmed and seeded

  • 2 dried guajillo chiles, stemmed and seeded

  • 1 dried pasilla chile, stemmed and seeded

  • 1 medium onion, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon smoked paprika

  • 1 teaspoon cayenne pepper

  • 2 cups beef broth

  • 1 tablespoon apple cider vinegar

  • Salt and black pepper to taste

Instructions:

  • Toast the dried chiles in a dry skillet over medium heat until fragrant, about 1-2 minutes.

  • Soak the toasted chiles in hot water for 15 minutes, then blend into a smooth paste.

  • Heat oil in a large pot over medium-high heat. Brown the beef cubes in batches, then set aside.

  • In the same pot, sauté onions and garlic until softened.

  • Stir in cumin, oregano, paprika, and cayenne pepper, cooking for 1 minute.

  • Add the chile paste and cook for another 2 minutes.

  • Return the beef to the pot and pour in the beef broth.

  • Simmer uncovered for 2-3 hours, stirring occasionally, until the beef is tender.

  • Stir in apple cider vinegar, season with salt and pepper, and serve hot.

 

This chili is bean-free, staying true to Texas tradition. It’s bold, smoky, and deeply satisfying.
