Chilled Cucumber and Yogurt Soup (Tzatziki Soup) with Fresh Dill
Origin: Greece
Ingredients:
2 large cucumbers, peeled, seeded, and finely diced
2 cups Greek yogurt
2 cloves garlic, minced
¼ cup fresh dill, finely chopped
2 tbsp fresh lemon juice
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ cup cold water (adjust for preferred consistency)
Optional garnish: diced cucumber, fresh dill, a drizzle of olive oil
Instructions:
1. Prepare the Cucumbers
Peel, seed, and finely dice the cucumbers. If you prefer a smoother soup, blend them for a few seconds until slightly pureed.
2. Mix the Ingredients
In a large bowl, whisk together Greek yogurt, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.
Add the diced (or blended) cucumbers and mix well.
3. Adjust the Consistency
Stir in cold water a little at a time until the soup reaches your desired consistency—some prefer it thick and creamy, while others enjoy a thinner, more sip-able texture.
4. Chill & Serve
Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Serve chilled, garnished with extra cucumber, dill, and a drizzle of olive oil.
