Chilled Cucumber and Yogurt Soup (Tzatziki Soup) with Fresh Dill
Origin: Greece

 

Ingredients:

  • 2 large cucumbers, peeled, seeded, and finely diced

  • 2 cups Greek yogurt

  • 2 cloves garlic, minced

  • ¼ cup fresh dill, finely chopped

  • 2 tbsp fresh lemon juice

  • 2 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ cup cold water (adjust for preferred consistency)

  • Optional garnish: diced cucumber, fresh dill, a drizzle of olive oil

Instructions:

1. Prepare the Cucumbers

  • Peel, seed, and finely dice the cucumbers. If you prefer a smoother soup, blend them for a few seconds until slightly pureed.

2. Mix the Ingredients

  • In a large bowl, whisk together Greek yogurt, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.

  • Add the diced (or blended) cucumbers and mix well.

3. Adjust the Consistency

  • Stir in cold water a little at a time until the soup reaches your desired consistency—some prefer it thick and creamy, while others enjoy a thinner, more sip-able texture.

4. Chill & Serve

  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.

  • Serve chilled, garnished with extra cucumber, dill, and a drizzle of olive oil.
