Zucchini & Lemon Thyme Soup (France)

  • Servings: 4

  • Cooking Time: 40 minutes

  • Ingredients

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 medium onion, chopped

  • 2 medium potatoes, diced (~12 oz total)

  • 3 cups chopped zucchini (~1.5 lbs)

  • 4 cups chicken stock

  • ¼ cup fresh lemon thyme leaves

  • 2 bay leaves

  • 1 (14 oz) can cannellini beans, drained

  • ⅓ cup chopped parsley

  • Salt and pepper to taste

  • Instructions

  • Heat olive oil in a saucepan over medium-high heat.

  • Add garlic and onion, cooking for 3 minutes until softened.

  • Stir in potatoes and zucchini, cooking for 5 minutes.

  • Pour in chicken stock, add lemon thyme and bay leaves, cover, and simmer for 20 minutes.

  • Remove bay leaves and puree the soup until smooth.

  • Stir in cannellini beans, parsley, salt, and pepper, cooking until warmed through.

  • Serve hot and enjoy!
