Zucchini & Lemon Thyme Soup (France)
Servings: 4
Cooking Time: 40 minutes
Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 medium potatoes, diced (~12 oz total)
3 cups chopped zucchini (~1.5 lbs)
4 cups chicken stock
¼ cup fresh lemon thyme leaves
2 bay leaves
1 (14 oz) can cannellini beans, drained
⅓ cup chopped parsley
Salt and pepper to taste
Instructions
Heat olive oil in a saucepan over medium-high heat.
Add garlic and onion, cooking for 3 minutes until softened.
Stir in potatoes and zucchini, cooking for 5 minutes.
Pour in chicken stock, add lemon thyme and bay leaves, cover, and simmer for 20 minutes.
Remove bay leaves and puree the soup until smooth.
Stir in cannellini beans, parsley, salt, and pepper, cooking until warmed through.
Serve hot and enjoy!
